You do have Auria Pro, right?
If so, just add a midi track, then click on the instrument name, and a pop-up will appear allowing you to choose an instrument.

My iPad Pro isn't experiencing this problem. I just upgraded to 10.3, but I didn't notice it happening in 10.2 either.

Agreed, it's hands down one of the best EQs available on any platform. And it's fairly easy on the CPU: when you get that Pro you can throw it on every track. In one test I had it running on 40 individual tracks on my Pro 12.7 without breaking even a mild sweat.
